Slow Cooker: Hot & Spicy Braised Peanut Chicken

If you are fan of peanut butter or Thai food, then this recipe is perfect for you!Now, I linked the website to give credit from where I got the recipe from. I actually bought the BH&G book for slow cooker recipes, "The Ultimate Slow Cooker Book" (where you can also find this recipe). I highly recommend this book if you are fan of using your slow cooker. Filled with great recipes for all taste buds.

Slow Cooker:

Hot & Spicy Braised

Peanut Chicken

? ? ? ? ? ? ? ? ? ? ??

Ingredients:

- 1 medium onions, diced

- 2 carrots, diced

- 3 chicken breasts, cut into cubes

- ? cups of chicken broth

- 3 tablespoons of peanut butter

- ? teaspoon of grated lime peel

- 2 tablespoons of lime juice?

- 2?tablespoons?soy sauce

- 2?tablespoons?of quick-cooking tapioca

- 1?tablespoons?of fresh grated ginger

- 2 teaspoons of red curry paste

- 4 garlic cloves, minced

- ? cup of coconut milk, unsweetened

- rice

Directions:

- In the slow cooker place the diced carrots and onions on the bottom and followed by the cubed chicken.

- In a seperate bowl, mix together the peanut butter, broth, lime peel, lime juice, soy sauce, tapioca, ginger, cury paste and onions pour over the chicken.

- Set on either LOW 5-6hrs or HIGH 2?-3hrs?

- Add the milk, mix well and let it stand for 5mins.

- Service with rice!
